Laura Vitale’s Granola Bars

Laura Vitale's granola bars are the perfect on the go breakfast (especially if you want granola, but don't have time to sit down for a bowl!).

Ingredients

  • cup unsalted butter or canola oil or coconut oil
  • ½ cup honey use maple syrup if you need it to be vegan
  • ¼ cup brown sugar
  • ½ teaspoon vanilla extract
  • 2 cups rolled oats
  • ½ cup flour or almond meal or wheat germ
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • 2 cups toasted mixed nuts and dried fruit

Instructions

  1. In a small saucepan over medium heat, bring the butter, honey and sugar to a boil. Remove from heat. Add the vanilla. Add everything else and stir well.
  2. Pour into a parchment lined 8x8 pan. Pack down firmly.
  3. Bake at 350F for about 25 to 30 minutes. Cool completely before cutting into bars.
