Laura Vitale's granola bars are the perfect on the go breakfast (especially if you want granola, but don't have time to sit down for a bowl!).

Ingredients
⅓cupunsalted butter or canola oil or coconut oil
½cuphoneyuse maple syrup if you need it to be vegan
¼cupbrown sugar
½teaspoonvanilla extract
2cupsrolled oats
½cupflour or almond meal or wheat germ
½teaspoonbaking soda
½teaspoonground cinnamon
½teaspoonkosher salt
2cupstoasted mixed nuts and dried fruit
Instructions
In a small saucepan over medium heat, bring the butter, honey and sugar to a boil. Remove from heat. Add the vanilla. Add everything else and stir well.
Pour into a parchment lined 8x8 pan. Pack down firmly.
Bake at 350F for about 25 to 30 minutes. Cool completely before cutting into bars.
