One Layer Cake Recipes

One layer cakes get an unfair amount of crap (especially from my mom), but they're faster and easier than layered cakes while still being delicious.

They're the kinds of desserts that Ina Garten would probably keep on hand in case her friends popped by; that's not my style, so I love these as a mid afternoon snack or to take to a casual family dinner.
